Hearty Lentil Soup: Vegan & Delicious

  • 1 cup green lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped

  3. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat, cover, and simmer for about 20-25 minutes, or until the lentils are tender.
  4. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  5. Remove the bay leaf and add lemon juice for a fresh zing. Season with salt and pepper to taste.
