  • 2 tablespoons olive oil

  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and chopped
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) cannellini beans, drained and rinsed
  • 6 cups vegetable broth
  • 1 cup small pasta (such as ditalini or macaroni)
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, for garnish


  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until fragrant and translucent.
  2. Add the carrots, celery, zucchini, and green beans. Cook for a few minutes until they start to soften.
  3. Stir in the diced tomatoes, kidney beans, cannellini beans, vegetable broth, dried basil, dried oregano, salt, and pepper. Bring the soup to a boil.
  4. Reduce the heat and simmer for about 20 minutes, or until the vegetables are tender.
  5. Meanwhile, cook the small pasta in a separate pot according to the package instructions. Drain and set aside.
  6. Once the soup is ready, add the cooked pasta and stir to combine.
  7. Taste and adjust the seasoning as needed. If the soup is too thick, you can add more vegetable broth.
  8. Serve hot, garnished with fresh parsley.
