  • 4 cups vegetable broth
  • 2 packs of ramen noodles
  • 1 cup sliced shiitake mushrooms
  • 1 cup baby spinach
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bell peppers (red and yellow)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon miso paste
  • 1 teaspoon grated ginger
  • Salt and pepper to taste


  1. Heat sesame oil in a large pot over medium heat. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  2. Add sliced mushrooms, carrots, and bell peppers. Cook for 5 minutes until the vegetables begin to soften.
  3. Pour in vegetable broth and bring to a boil. Stir in miso paste and soy sauce. Reduce heat and simmer for 10 minutes.
  4. Meanwhile, cook the ramen noodles according to package instructions. Drain and set aside.
  5. Once the broth has simmered, add baby spinach to the pot and cook for an additional 2 minutes until wilted.
  6. Season the broth with salt and pepper to taste.
