  1. Start by preparing your sauce. In a small bowl, whisk together soy sauce, sesame oil, hoisin sauce, rice vinegar, and cornstarch. Set it aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook until they are golden brown on all sides. Remove tofu from the skillet and set it aside.
  3. In the same skillet, add a bit more oil if needed, then add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
  4. Add all the sliced and julienned vegetables to the skillet. Stir-fry for 3-4 minutes until they start to become tender but still crisp.
  5. Pour the prepared sauce over the vegetables and tofu. Stir-fry for another 2-3 minutes until the sauce thickens and coats everything evenly.
